CHOW MEIN VEGAN RECIPE

Here is an easy and vegetarian recipe based on the famous Chinese noodles I Chow Mein.

The secret to making this dish is in its sauce and in making the noodles sauté on a very high flame.

We can say that Chow Meins are Noodle heaven and with this recipe you make them Vegan and Plant Based

INGREDIENTS for 4 people:

  • Fried Tofu (optional)
  • 4 bok choy (quartered)
  • 120 g of bamboo shoots (sliced)
  • 3 garlic cloves (minced)
  • 25 g of ginger (julienned)
  • 3 spring onions (pieces 5cm long)
  • 1 red chilli (julienned)
  • 80 g of mushrooms (sliced)
  • ½ pepper (long strips)
  • 1 handful of bean sprouts
  • ½ cup of vegetable broth
  • 2-3 tablespoons of light soya sauce
  • 200g of instant egg noodles
  • ¼ teaspoon of pepper
  • sesame seeds
  • 2 tablespoons of oil

PROCEDURE:

Cut the tofu into small pieces and fry.
In a wok, add 2 tablespoons of oil , then the ginger, garlic and chilli. Stir for a minute then add bok choi, mushrooms, bamboo shoots, pepper. Cook for 2-3 minutes.
Add the noodles, soy sauce, pepper, broth. Cook for 1 minute, then add the onion and bean sprouts (tofu if using).
Sprinkle the sesame seeds and serve
